I would like to know whether it is possible to show the thank you page on a seperate URL rather than the same URL?

This is so that submissions of forms can be counted as goals in Google Analytics.

The form I have setup is a standard 2 page form in QuickMode. The first page is the form details. The second page is the thank you page.

In your case I would define an end submit piece (not script!) in the form settings. There you'll add this

What if I have two seperate forms, which I want to track seperate goals with. Is there a way to associate specific forms with specific end submit pieces?
